Leveled Up Fried
Rice

½ pack frozen Trader Joes Vegetarian Fried Rice
¼ cup stir fry sauce
1 tbsp soy sauce
1 tbsp avocado oil, divided 
1 cup organic broccoli
1 package of organic cremini mushrooms
3 eggs 
salt
pepper

Ingredients

- Thoroughly clean mushrooms and cut into quarters. Place into a bowl. 
- Cut broccoli into bite size pieces and place into same bowl as mushrooms. 
- In a sauce pan over medium heat, add in ½ tbsp of avocado oil. Add in mushrooms and broccoli. Season with salt and pepper and sauté for 6-8 mintues, allowing veggies to cook down.
- Bring a medium sized pot to medium high heat, add in the other ½ tbsp of avocado oil. Add ½ pack of Trader Joes Vegetarian Fried Rice to pot. Stir to allow oil to coat rice.
- Continue sautéing the veggies in the sauce pan as the fried rice cooks. Lower the heat on the saucepan. Add in the ¼ cup of stir fry sauce and combine.
- Once the fried rice is thoroughly heated, add in 1 tbsp of soy sauce and cook for 1-2 minutes. 
- Press the rice to one side of the pot and crack in 3 eggs. 
- Begin to scramble the eggs in their half of the pot. When eggs are almost completely scrambled, combine with the rice and continue to cook 2-3 minutes. 
- As soon as the eggs and rice are completely cooked through, scoop rice into a bowl. 
- Top with the stir fry mushrooms and broccoli. 
- Perfect for two servings. Enjoy!
