Saucy Chicken Sausage & Veggies
1 pack chicken sausage, sliced into coins
2 packs organic crimini mushrooms
1 bunch organic spinach
1 jar of your favorite pasta sauce
½ tsp avocado oil
salt
pepper
grated parmesan
Ingredients
- Clean mushrooms thoroughly. Slice larger shrooms into quarters, and smaller shrooms into halves.
- Using a medium/large sauce pan over medium heat, add avocado oil and begin to sauté mushrooms.
- Season shrooms with salt & pepper. Cook for about 7-9 minutes, or until cooked down. Remove from pan and set aside.
- Using the same pan over medium high heat, add in sausage coins. Sauté until a light brown crust develops.
- When chicken sausage is ready, add shrooms back in, and cover with pasta sauce. Stir to combine.
- Add in spinach, bunch by bunch, as it will cook down. Ensure ingredients are thoroughly combined.
Serve over your favorite pasta or enjoy on its own, but don't forget to top it with some grated parmesan. Enjoy!
